Dinner Party

Having guests over for dinner doesn't have to be stressful.  Below I've created a lovely meal starting with appetizers and ending with a delicious dessert.  Wishing you a happy, blessed and prosperous New Year!

I hope you enjoy the recipes listed below.

Appetizers - for starting the meal I would offer up some chilled shrimp with cocktail sauce, thin slices of smoked salmon with petite rye bread, minced red onions, softened cream cheese and fresh dill. Serve with wine or Champagne.


Cheddar Chive Biscuits


2 cups all purpose flour

1 Tbl. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. sugar
1/2 cup unsalted butter, chilled
4 Tbl. fresh chives, minced
1 cup buttermilk
1/2 cup sharp Cheddar cheese, shredded
Tabasco - I always like a good splash

Preheat oven to 400 degrees.  Into a bowl stir flour, baking powder, baking soda, salt and sugar.  With a pastry blender cut in the butter until mixture resembles cornmeal.  Make well in center of mixture.  In small bowl add chives, buttermilk and Tabasco (if using).  Pour buttermilk into well and add cheese, stir quickly to combine just until dough pulls aways from bowl.  Turn out onto floured work surface and knead quickly about 4 turns.  Pat into a 1/2 inch round and with biscuit cutter cut into biscuits.  Place onto ungreased baking sheet and bake about 12 to 15 minutes.  Serve


Green Salad with Gruyere


Vinaigrette

2/3 cup olive oil
1/4 cup Champagne vinegar
salt and freshly ground black pepper
1 tsp. fresh chives, minced
Croutons
1 thin baguette, sliced thinly
olive oil
2 garlic cloves
Salad
12 cups torn mixed lettuces
6 oz. Gruyere cheese, sliced into thin strips

Preheat oven to 350 degrees.  Croutons; place slices onto baking sheet. Brush with olive oil and bake about 12 minutes to golden.  Remove from oven and while still warm rub each crouton with garlic clove.  Vinaigrette; into a bowl whisk all ingredients to combine, taste and adjust flavorings.  Place lettuces onto rimmed serving platter, drizzle over some vinaigrette and toss to combine, top with cheese and croutons.


Potato Gratin


1 cup heavy whipping cream

1 cup whole milk
1 1/4 cup goat cheese, cut into small pieces
1 garlic clove, minced
1 Tbl. all purpose flour
salt and freshly ground black pepper
2 1/2 lbs. Yukon gold potatoes, peeled and thinly sliced

Preheat oven to 400 degrees. Into a large bowl whisk the cream, milk, cheese, garlic, flour, salt, and pepper.  Arrange potato slices in single layer into a greased medium size baking dish.  Pour 1/4 of the milk mixture over top, layer more potato slices, pour over 1/4 of the milk mixture.  Repeat with remaining potato slices and milk mixture until you reach the top of the dish.  Bake about 1 hour 10 minutes until potatoes are tender and top is bubbly.


Roasted Spicy Carrots

1 lb. carrots
1 Tbl. olive oil
1 Tbl. real maple syrup
salt and freshly ground black pepper
1/4 tsp. cayenne pepper

Preheat oven to 400 degrees.  Peel carrots, rinse in cold water, pat dry.  Slice into thick julienne.  Into a large bowl add carrots and remaining ingredients. Toss to combine.  Spread onto baking sheet and cook about 20 minutes, tossing halfway though.

Delicious Pork Tenderloin with Orange Glaze - read directions before making this takes a little time


1 (3 lb.) boneless pork loin

Spice paste
2 tsp. garlic, minced
2 Tbl. apricot mustard (see recipe below)
1 orange, zested
1/3 cup fresh orange juice
2 Tbl. pomegranate syrup (easy to find, I get mine on Amazon)
2 Tbl. soy
Apricot mustard
1 cup dry mustard (such as Coleman's)
1/2 cup cider vinegar
6 oz. dried apricots
1 cup hot water
1/2 cup orange juice
1 cup dark brown sugar, packed
salt and freshly ground black pepper
1/2 tsp. cinnamon
1/4 tsp. ground ginger
Basting sauce
1/3 cup fresh orange juice
3 Tbl. honey
3 Tbl. pomegranate syrup
2 Tbl. soy sauce

Apricot mustard; into a bowl whisk the dry mustard with vinegar.  Let stand 1 hour.  Into a small saucepan add apricots and hot water, let stand 30 minutes.  Place the pan with apricots over medium heat and bring to simmer uncovered for 5 minutes.  Remove from heat.  Into a food processor combine the apricots and liquid from pan, and orange juice, puree to smooth.  Add mustard/vinegar mixture, brown sugar, salt, pepper, cinnamon and ginger processing to mix.  Place in a container covered and refrigerate.  Place the pork into a baking dish.  Prepare spice mix; into a bowl combine spice mix ingredients and mix.  Rub onto meat, cover and marinate at least 6 hours or overnight.  Basting sauce; into a small bowl add ingredients and mix to combine.  Preheat oven to 400 degrees.  Place the marinated pork into a roasting pan and roast brushing with basting sauce until nicely glazed about 1 hour 15 minutes, or until thermometer reads 140 degrees.  Transfer pork to work surface tent with foil for 10 minutes.  Slice across the grain and place onto serving platter.  Note; you can also cook this tenderloin on a grill.


Bing Cheery Tart


2 cups pitted Bing cherries or you can use raspberries

2 Tbl. Frangelico
Tart Shell
1 1/2 cup all purpose flour
1/4 cup sugar
1/2 cup unsalted butter, chilled and cut into small pieces
1 egg yolk
2 Tbl. heavy whipping cream
1 Tbl. Frangelico
1 tsp. fresh lemon zest
Topping
1 cup cream cheese, soft
1/3 cup sugar
1 egg and 2 egg yolks
2 Tbl. Frangelico
1/2 tsp. almond extract

Into a bowl toss cherries with Frangelico, cover and let stand 4 hours.  Tart shell; into a bowl combine flour and sugar, add butter and with a pastry blender cut until mixture resembles cornmeal.  Into a small bowl whisk the egg yolk, cream, Frangelico and zest.  Add to flour mixture and with a fork stir together until dough form.  Gather into a ball, flatten and wrap in plastic wrap.  Chill for 1 hour.  Preheat oven to 400 degrees.  Onto floured work surface roll out dough into a round about 11 inches.  Transfer into a round 9-inch tart pan with removable bottom.  Make the sides slightly higher than the tart rim so there is enough edge to hold filling.  Trim off any excess.  Prick a few holes in pan with fork.  Line tart with foil and fill with dried beans.  Bake about 15 minutes, remove foil and weights.  Lower oven temp. to 350 degrees and bake 15 minutes. Transfer to wire rack to cool.  Cheese filling; into a bowl combine cream cheese, sugar, whole egg and egg yolk, liqueur and extract beating with electric mixer to combine.  Place the cherries evenly on bottom of baked tart shell.  Pour over cheese mixture and bake about 25 minutes, remove to cooling rack.

Salvation - God wants His children to rest in the knowledge that they belong to Him.  Jesus said, "My sheep hear my voice, and I know them, and they follow me: And I give unto them eternal life; and they shall never perish, neither shall any man pluck them out of my hand.  My Father, which gave them me, is greater than all; and no man is able to pluck them out of my Father's hand (John 10:27-29).  The truth of God's Word will dispel doubts about salvation.  As a Christian, you need to learn about the security of your standing in Christ and recognize the deception of the enemy, Satan, who seeks to torment you with doubt.  Walk in the Freedom of Truth - One of God's purposes for giving us His Word is to provide assurance of salvation.  The Apostle John wrote; And this is the testimony; that God has given us eternal life, and this life is in His Son.  He who has the Son has live; he who does not have the Son of God does not have life.  These things I have written to you who believe in the name of the Son of God, that you may know that you have eternal life, and that you may continue to believe in the name of the Son of God.  (1 John 5:11-13 and John 3:15-17).  As a child of God, be faithful to read, study and meditate on God's Word.  As your heart is filled with truth, you will mature in your relationship with your heavenly Father, and He will give you wisdom and understanding.

While speaking to a crowd of new believers, Jesus said, "If you hold to my teaching, you are really my disciples.  Then you will know the truth, and the truth will set you free." (John 8:31-32).  As you learn the truths recorded in the Bible, you will be set free from doubt and confusion about your salvation.

Recognize and Resist Satan's Deceptions - Jesus described Satan as an enemy who comes "to steal, and to kill, and to destroy" (John 10:10).  Even though Satan cannot possibly snatch you out of God's hand, Satan tries unceasingly to steal your peace and joy be sending fiery darts of doubt into your mind.  The following bible passages will give you peace in your salvation.

They replied, "Believe in the Lord Jesus, and you will be saved - you and your household." - Acts 4:12

And everyone who calls on the name of the Lord will be saved. - Psalm 62:1

He has saved us and called us to a holy life - not because of anything we have done, but because of his own purpose and grace.  This grace was give us in Christ Jesus before the beginning of time. - Acts 16:31

Truly my soul finds rest in God; my salvation comes from him. - 2 Timothy 1:9

Or do you not know that wrongdoers will not inherit the kingdom of God?  Do not be deceived; Neither the sexually immoral nor idolaters nor adulterers no men who have sex with men no thieves not the greedy no drunkards no slanderers nor swindlers will inherit the kingdom of God. - Acts 2:21

For it is with your heart that you believe and are justified, and it is with your mouth that you profess your faith and are saved.  - 1 Corinthians 6:9-10

For the grace of God has appeared that offers salvation to all people.  It teaches us to say "NO" to ungodliness and worldly passions, and to live self-controlled, upright and godly lives in this present age. - Romans 10:10

For the Son of Man came to seek and to save the lost. - Titus 2:11-12

The Lord is not slow in keeping his promise, as some understand slowness.  Instead he is patient with you, not wanting anyone to perish, but everyone to come to repentance. - Luke 19:10

Jesus replied, "What is impossible with man is possible with God." - 2 Peter 3:9

Enter though the narrow gate.  For wide is the gate and broad is the road that leads to destruction, and many enter through it.  But small is the gate and narrow the road that leads to life, and only a few find it.  - Mark 16:16

Though you have not see him, you love him; and even though you do not see him now, you believe in him and are filled with an inexpressible and glorious joy, for you are receiving the end result of your faith, the salvation of your souls. - Matthew 7:13-14
